Clean Out Your Pantry Challenge- Smoothie Edition

I am a little embarrassed to admit that I had a butternut squash sitting around for… quite a while.

 

I am not sure why, they are very easy to prepare (for this one, split in half, scooped out the seeds, put some avocado oil on them, and put it in the air fryer for 20 min skin side up and 10 min skin side down)

 

As I was letting those roast, I started to see what other ingredients I could use in a smoothie. I went the smoothie route because I was inspired by a butternut smoothie recipe shared on Facebook.

 

I pulled out 4 kinds of nuts (ended up using 2), and then some typical staples; honey, cinnamon, and protein.

 

I dropped the rest of the cashews I had into the Instapot with some cinnamon, honey, and boiling water. I cooked for 5 minutes and natural pressure released for about 5. I dropped that whole mixture into the blender and had about 3 cups of cashew milk. It was still pretty warm, so I had to let it cool down.

 

Next, I pulled out the squash and scooped it out of the shell.

 

Putting everything in the blender, minus the Rasa Tea. Once I blended I realized it was a  bit too thick and also a little warm from the squash still. I almost threw in water but was sipping on some Rasa tea while making the decision and realized it would be really tasty in the shake and take the thickness down a notch.

 

I had to add several cubes of ice to cool the whole smoothie down as well.

 

The ended product, very creamy and smooth, slightly sweet, nutty, and just plain delicious.
